Pumpkin Quesadillas That Make Lunch More Fun

A quesadilla is already a dependable kid lunch. Give the top tortilla a little jack-o’-lantern face, and suddenly it’s a Halloween lunch they’ll want to show off. The cheese peeking through the cutouts gives it that bright pumpkin look without food coloring. 🎃

You can keep the face sweet or silly, depending on your kid. Let an adult handle the knife work, then invite the kids to sprinkle on the cheese. Add fruit, salsa, or a veggie they already enjoy on the side.

Pumpkin quesadillas

Prep Time 5 minutes
Cook Time 6 minutes
Total Time 11 minutes
Servings: 1 Quesadilla
Course: Snack

Ingredients

  • 2 small flour tortillas
  • 1/3 cup shredded cheddar cheese
  • 1 teaspoon butter or oil optional

Method

  1. With a small sharp knife, cut two eyes and a mouth out of one tortilla. Leave the other tortilla whole.
  2. Put the whole tortilla in a skillet over medium-low heat. Sprinkle the cheese evenly over it, keeping it inside the edges.
  3. Add the face-cut tortilla on top. Cook for 2–3 minutes, then carefully flip and cook another 2–3 minutes, until the cheese melts and both sides are lightly golden.
  4. Cool slightly, then cut into pieces if needed.

Notes

Lunchbox tip: Let the quesadilla cool before closing the container to reduce sogginess. Keep chilled with an ice pack until lunch.
