Easy Grilled Chicken, Asparagus & Garlic Parmesan Mashed Potatoes

This was one of those dinners where I did not feel like making anything complicated, but I still wanted an actual good meal lol. We had grilled chicken, asparagus, and garlic parmesan mashed potatoes—and it came out sooo good.

The chicken was juicy and seasoned really simple, the asparagus had that little roasted/grilled flavor, and the mashed potatoes were creamy with garlic, butter, and parmesan. Literally the kind of dinner that makes you go back for “just one more bite” of mashed potatoes.

It’s easy enough for a regular weeknight, but still feels like you put a real dinner together.

Ingredients
  

Grilled Chicken
  • 4 chicken breasts
  • 1 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • A little Italian seasoning optional
Asparagus
  • 1 bunch fresh asparagus ends trimmed
  • 1 tablespoon olive oil
  • Garlic powder
  • Salt and pepper to taste
Garlic Parmesan Mashed Potatoes
  • 2 pounds potatoes peeled and chopped
  • 3 tablespoons butter
  • ½ to ¾ cup milk
  • 2 cloves garlic minced
  • ½ cup grated parmesan cheese
  • Salt and black pepper to taste
  • Parsley and extra parmesan for the top optional

Method
 

  1. Start by washing and chopping your potatoes. Add them to a pot of salted water and boil until they are soft enough to easily poke with a fork—usually around 15 to 20 minutes.
  2. While those cook, rub the chicken breasts with olive oil. Season both sides with garlic powder, onion powder, paprika, salt, pepper, and Italian seasoning if you have it.
  3. Grill the chicken over medium-high heat for about 6 to 8 minutes on each side, or until the center reaches 165°F. Let it sit for a few minutes before cutting so it stays juicy.
  4. Toss the asparagus with olive oil, garlic powder, salt, and pepper. Cook it on the grill, in a grill pan, or roast it in the oven at 400°F for about 12 to 15 minutes.
  5. Drain the potatoes once they’re soft. Add butter, minced garlic, milk, parmesan, salt, and pepper. Mash everything together until creamy. Add a little more milk if needed.
  6. Plate it all up, add extra parmesan or parsley to the potatoes if you want, and enjoy!

Notes

You can swap chicken breasts for chicken thighs if your family prefers them. I also love adding a little garlic butter over the chicken right before serving—it makes it even better.
